SLEEPLESS IN... EAU CLAIRE? Insomnia Cookies Announces E.C. Location

while the late-night bakery chain has not shared an estimated opening date or timeline, it did announce an Eau Claire location is "coming soon"

Insomnia Cookies just announced its plans to open two more locations in Wisconsin – and Eau Claire is part of that Wisco duo.

In a social media post shared just two hours ago, Appleton and Eau Claire were part of the total 28 "coming soon" locations across the country (and over in the U.K.). The late-night bakery chain currently has five Wisconsin locations: three in Milwaukee, one in Madison, and the fifth in Oshkosh. 

Insomnia Cookies was founded in 2003 by then-college student Seth Berkowitz. According to the bakery's website, its origin story is as follows: "The idea was born out of a dislike for the heavy meals that local late-night food options offered, and a love for the convenience of delivery. To provide the midnight snack that he knew students were craving, Berkowitz began baking and delivering warm cookies around campus, and that's how Insomnia Cookies' future was set in motion." 

What's the hype? Well, here's the menu to get an idea (Oh, and Insomnia Cookies delivers during all open hours, which typically stretches from about 11am-1am during the week and 11am-3am on weekends):

Today, Insomnia Cookies has over 300 locations and previously stated plans to open another 1,800 bakeries in the U.S. alone within the next decade. The bakery chain saw a record-breaking year in 2024 in terms of expansion, opening roughly 55 stores in a single year. 

There is no estimated opening date or timeline for any of the recently announced "coming soon" locations. (We even called the general Insomnia Cookies phone number and chatted with a "Cookie Specialist." They said there is no information available, not even a ballpark guess. Bummer. The social media announcement did state the forthcoming locations will be "our most openings ever in a 3 month span.")
