Cottage Forged Baking Joins Forces with Local Mexican Eatery

the gluten- and dairy-free bakery items are now available at Silly Serrano

Allergy-friendly baked goods can be extremely difficult to find, and Cottage Forged Baking is taking the opportunity to change those odds. Operating within local Mexican restaurant Silly Serrano (2006 Cameron St., Eau Claire), Alyssa Potts, pictured, has moved her gluten-free and dairy-free baking from her home to a professional kitchen. Initially starting out working under Wisconsin’s cottage food laws, she found herself outgrowing the home kitchen and sought a bigger setting.

“I knew it would be challenging to certify celiac-safe items … so when I found out that Silly Serrano was an extremely clean space and everything is pretty gluten-friendly already and allergy safe, I was able to move forward,” Potts said.

This partnership officially began a little over a month ago with Silly Serrano selling Cottage Forged Baking  goods such as donuts and muffins during their operating hours of 7am-2pm. Ordering directly from the business is an option as well, with a delicious variety of cakes, donuts, cheesecake, muffins, pies, cupcakes, scones, and cinnamon rolls for customers to choose from.


Deciding on her hours was a challenge, because Potts shares kitchen space and maintains a day job, so she mostly bakes in the evening. Deliveries often occur in the early morning, with pickups operating in the evening between 6:30-8:30pm.

Cottage Forged Baking has had a lot of success in its new commercial beginning. “It’s bigger than I thought it would be, which is great,” Potts said. With everything being gluten- and dairy-free, she now also has the space to adjust recipes to other dietary requirements, like eggless or sugarless baked goods.

It can be an incredible struggle for those who have celiac or food allergies to find baked goods that can be trusted to be safe and not cross-contaminated. Cottage Forged Baking is aiming to break through those barriers.
