Basil Wyndthorp’s Food Truck

a Cubano with a kick and all the right flavors

Taylor Reisdorf |

If you’re looking for a food truck that offers kickin’ flavors and radiates some serious rock ’n’ roll vibes, Basil Wyndthorp’s is for you. The Menomonie-based food truck – which boasts a vibrantly colored and impressively intricate lion mural on its side – is returning to Food Truck Friday.

Owned by John Betchkal, the “little adventurous food truck that could” has been up and running for about two years. While the menu changes frequently and new original-recipe items are constantly being created, some Basil Wyndthorp’s specialties include mouth-watering pulled pork eats and Cuban sandwiches.

Some past menu items include a variety of juicy burgers, fish and chicken tacos, and some variations on the classic that is mac ’n’ cheese. Basil Wyndthorp’s strays away from the ordinary when it comes to these concoctions. They recently introduced The Boston Rocker Cheeseburger, Crab Mac & Cheese, the Japanese Katsu Burger, the Macho Taco, and the Hero Gyro. Basil Wyndthorp’s also serves up some quintessential sides such as french fries and cheese curds.

The funky truck emphasizes its use of fresh ingredients, and the pork sold at the truck comes straight from Betchkal’s very own farm. Basil Wyndthorp’s can be found at a variety of events, and has made appearances at Cracked Barrel Winery in Hudson, the Menomonie and Barron farmers markets, and Mears Park in St. Paul. The truck also offers catering services.

Volume One’s new Food Truck Friday event series – presented in partnership with Silver Spring Foods – continues on September 7 in downtown Eau Claire in the parking lot between N. Farwell and N. Barstow streets (aka the “Railroad Lot”). Each month, up to ten food, snack, and drink establishments will open for business for lunch and dinner (11am-8pm), providing the opportunity to sample and feast upon the work of multiple mobile chefs.
