Rolling into downtown Eau Claire, Guac N' Roll is about to become Eau Claire's newest Mexican restaurant storefront. Opening in the 420 S. Barstow (formerly Teriyaki Madness), Guac N' Roll is Eau Claire's latest food truck-turned restaurant addition to the dining scene. Based in Arcadia, their bright yellow taco truck has been a staple of the food truck scene for the past few years.

"We want to thank all of our amazing family and friends who have supported us since day one and continue to enjoy our delicious food. ... We can't wait for everyone to come check out our new location and enjoy some of our signature dishes in a brand new setting." - Guac N' Roll's announcement on Facebook.

"We're excited to take the next step for Guac N' Roll, and expand our loyal customer base in Eau Claire," said owner Carlos Hernandez. "Our focus is on serving authentic Mexican cuisine. We highlight a number of meats including carne asada, al pastor, barbacoa, and others, served in tacos, burritos, loaded nachos & fries, and more."

"The existing space really meets most of our needs, and requires minimal remodeling," Hernandez said, who is excited to begin the work of moving in this week.

Guac N' Roll will open later this year. Be sure to check back for more as we announce an opening date and give you a preview of their dishes.
