Bomb Tacos Light Up With Authentic Taco Tastiness

If you’re in search of tasty tacos that’ll leave you feeling nothing but satisfied, then look no further: Royce Roberts and his partners Dan Cook, Tony Cook, and Brian Joseph recently opened Bomb Tacos in downtown Chippewa Falls.
Roberts got the idea of starting a taco stand after going to the Minnesota Cheese Festival in Falcon Heights. It was there that he met and talked with two women who started a food truck of their own. “I went to culinary school, and after meeting these girls and learning about their food truck, I thought about starting one with tacos,” he says.

Bomb Tacos isn’t necessarily a sit-down restaurant, but it’s not a food truck either; it’s somewhere in between. “It’s a stationary setup right now, but it’s like a food truck in that there won’t be any seating,” Roberts explains. “We will have outdoor seating in the summer.”
While Eau Claire is booming when it comes to Mexican restaurants, Roberts observed that there aren’t too many restaurants serving up tacos in the Chippewa Falls area – especially downtown. “It’s an untapped market; there aren’t too many street vendors in the area,” he elaborates.
As for the menu, Bomb Tacos is keeping things local, pulling its ingredients from farmers markets and in some cases, from the lake. “We’re planning on serving fish and seafood tacos on Saturdays, but it will be dependent on what we can catch while fishing up north,” he said. “During the fishing season, we’ll probably have halibut and fresh salmon. We want to keep it as local as possible, so we’ll go to the farmers market for ingredients.”
In addition to seafood, customers can expect lots of fresh pork and reasonable prices. Roberts said they are going to try and focus on different regions of Mexico, while making effort to keep prices fairly low.
Roberts’ overarching goal is to encourage people to expand their boundaries. The restaurant plans to offer “taco of the week” and “taco of the month” options and to serve two styles of tacos: American and traditional. American-style tacos will have lettuce and cheese as add-ins, whereas traditional-style tacos will feature add-ins such as pickled veggies, Pico de Gallo, and queso fresco.
Bomb Tacos is at 504 N. Bridge St., in the spot once inhabited by Rosy’s Tacos and Short Stop, and Roberts is excited about the location with its proximity to the courthouse and a few local watering holes. This is especially great news for bargoers. “Most food places in the area close at 10pm, but we’re planning on being open late on Fridays and Saturdays,” Roberts explains. The tentative hours for Bomb Tacos are 11am to 3pm Tuesday through Saturday, 11am to 1am on Fridays, and from 10pm until they run out of food on Saturday nights.
Roberts’ ultimate goal for Bomb Tacos is to make enough money to get a fully-fledged food truck and travel around the area. “Between the music festivals, the Sounds Like Summer series at Phoenix Park, and everything else, it would be nice” to go eventually go mobile, Roberts says. “We’re just getting our foot in the door right now, though. It’s going to be an ever-evolving place. We just need to get the public to take it from here.”
