Our most-wanted eatery dream is about to become reality! The old Huebsch laundry building (100 N. Dewey St., Eau Claire) is being renovated into a 140-seat bar and restaurant with deck seating overlooking the Eau Claire River. Current Eau Claire city ordinances state food trucks can only operate on private property with the owner’s permission as well as in a handful of city parks. But city leaders are considering expanding this to include more parks as well as city streets. You can show your food truck love by visiting Gordo’s mobile Latin cuisine, which operates at Rick’s Service Center and emBARK dog day care. Check their Facebook page for the schedule.) And Chippewa Valley residents want IHOP (The International House of Pancakes)! The good news is, this restaurant chain is actually a franchise, so we just need a hero — er, entrepreneur — to take the leap and bring us that sweet, sweet, double-dipped French toast. —Amanda Foxcroft
