Chippewa Falls hotel restaurant raises the steaks

Word on the street: Tucked inside the Cobblestone Hotel & Suites in downtown Chippewa Falls is a new restaurant that will have you licking your chops – literally! The Wissota Chophouse couldn’t ask for a better location than on Bridge Street with its small shops and small-town atmosphere, which is exactly what the Cobblestone Hotel & Suites looks for: “Big City Quality, Small Town Values.”

“I think people were looking for a high-quality restaurant in the area,” says general manager Nate Suckerman. “We are really priding ourselves on that: great food and great service.”

Yes, there is good, and then there’s great. Definitely consider the latter when you check out the Wissota Chophouse because it dedicates itself to providing a high-quality selection to the Valley by specializing in only the best, like the finest cuts of USDA Angus beef sizzling to perfection, the freshest seafood bursting with flavor, and creative sides that come for two.

Did I also mention the top-notch wine and beer selection? There are 117 options, to be exact, and they are unique: You can’t find many of the items at many places around here. The draft selection will also rotate so you can expect to see a lot of different varieties coming into the chophouse. However, a few will stick around – such as Leinekugel’s, of course.

Suckerman said there has been a great response from the community regarding the new chophouse and what it has to offer. Folks from all over the Chippewa Valley and beyond have been talking up a storm about the delicious appetizers like sautéed calamari and truffle fries along with the signature entrees featuring ribeye and sea bass that are out of this world. With menus printed on a daily basis, the chophouse also has the capability of switching up dishes. So don’t be surprised if you can’t decide what to order.

If you find yourself needing a bit a guidance, Suckerman’s favorite dishes are the nightly features, which are the creations of the chophouse’s talented executive chef, Dan Caneff. These features change on a regular basis with Caneff’s new ideas spicing it up from time to time, and they also come with a fine dining twist like the dry-aged KC strip steak and the parmesan-encrusted monkfish. 

“The dishes he comes up with are amazing,” raves Suckerman. “Most recently was a Seafood Neuberg. And as far as desserts, Dan came up with a homemade Southern-style bread pudding with a bourbon caramel pecan sauce.”

When it comes to steaks, Suckerman says he is partial to the Filet Mignon. Of course, with the best cuts out there, you can definitely take your pick and know you won’t be disappointed.

So what’s all in store for the chophouse? Well, as Suckerman says, “To quote an old 1980s song… ‘The future’s so bright, I gotta wear shades.’ ”

And shades we will wear as the future of the Wissota Chophouse sure looks promising with its deliciously crafted dishes paired with a small-town vibe and friendly service. Suckerman says this is an exciting time for the chophouse, which is also opening up another location in a new Cobblestone hotel in Stevens Point later this year. He is thrilled about all the neat things happening with their new restaurant and how it will pave the way for future Wissota Chophouses.
