New upscale eatery in the works?

A group of experienced local individuals – restauranteurs and retailers – are ready to make a serious play in the local restaurant scene, with plans for a small “chef-driven, farm-to-table” fine dining restaurant right here in the Chippewa Valley. They hope to use a "community supported restaurant" sort of model, seeking a large number of lower-dollar investors to bring the space to fruition.

We can’t tell you just yet who’s involved or exactly what kind of eatery they’re talking about, but this is the language they’re using in an invitation to an informational meeting for potential start-up investors:

“... the greater Chippewa Valley lacks for this particular style of restaurant – a small, chef-driven eatery that is highly focused on quality ingredients and dedicated to the fundamental pleasures of the table. A place where you can bring family, friends, and business colleagues to truly impress them.”

In the invite, they compare the idea to the culinary efforts of Braise in Milwaukee, Piccolo in Minneapolis, Nostrano in Madison, or Chives in Green Bay.

The private meeting will take place next week, after hours in the Volume One Gallery inside The Local Store. There, the group plans to share their concept for the new upscale eatery without soliciting commitments – they'll be answering questions, getting feedback, that sort of thing. We'll let you know more as it develops.
