former Informalist chef has plans for Locavore mobile kitchen

Local chef Amy Huo, formerly of The Informalist, is rolling into the food truck scene this summer to celebrate Chippewa Valley farmers and foragers with The Locavore Mobile Kitchen. Huo said she plans to develop a menu that changes on a weekly basis depending on what produce is in season. The Locavore will offer gluten-free, vegan, and vegetarian options, while meat-lovers might enjoy seasonal “baby burgers” depending on availability.

“All I have ever wanted was to talk to the farmers, buy their food, and present it in a delicious and approachable way,” Huo said. “At the food truck I can talk to every single guest and share my recipes with them and inspire them to buy ingredients at the farmers market and try it themselves.” Huo is aiming for the highest percentage of local ingredients she can muster. “It’s always only ever been about the cause for me,” she said.
